The Flavor Experience

A unique, extra aged cheese with sharp & creamy notes. Hard to find; harder to forget! Since 1922, the Widmer family has owned and operated their Cheese Cellars. Wisconsin Master Cheesemaker, Joe Widmer, is the only person in the country to still traditionally produce his aged Brick cheese, making it a must-try. Made in small batches and hand-turned three times daily, their Brick, Cheddar, and Colby cheeses are award-winning favorites.

The Story

Joe Widmer is the Master Wisconsin Cheesemaker and 3rd generation owner of Widmer Cheese Cellars in Theresa, WI. He has earned master's certification in the cheddar style and it shows as Widmer produces fine block cheddars in different age profiles. The 10 year is amazingly creamy with just the right amount of acidity.

Usage Tips

A double IPA might be the only sparring partner that could keep up with the ten year cheddar. Although it seems like the acidity of the hops might be too much the high alcohol and malty sweetness will act as a foil. A high alcohol stout would work well too. Try it with some landjaegers and a bit of spicy sweet whole grain mustard.
