Product Description

Soft-ripened, rind-washed Italian style brie. Loaves typically come in square forms that are about 10 inches square and weigh about 4-5 pounds. But all so different from brie, Taleggio is taller and plumper (about 2 inches thick) with a thin pinkish-grey rind. Slightly salty, mild and fruity in its younger stages (Taleggio ripens in about 40 days) becoming even plumper, beefier, and buttery as it ages. Real Taleggio will have specific markings, usually about 4 circle designs stamped on the top, so beware of imitations. Always look for the rare Mountain Taleggio (Taleggio di Monte) which we will try to feature from time to time. When you are at your local cheese shop avoid Taleggio when the outer paper appears to be loose and new...Jump on Taleggio where the paper appears to be part of the rind and impossible to remove. When you order Taleggio from DiBruno Bros. by the pound, it should be consumed within a few days of you receiving it.

Use in place of brie any time a fuller, buttery milky flavor is desired. Use a 1 pound square and stuff it like you would brie (with nuts or grapes and then bake). We prefer it eaten as is, perhaps drizzled ever so lightly with a touch of honey.
