Named by Bon Appetit Magazine as 2007’s “Food Artisans of the Year”, La Quercia founders Herb & Kathy Eckhouse continue to represent the highest quality of artisan meats with one of their latest additions, Pancetta Americano. Traditional Italian style pancetta is pork belly that has been cured rather than smoked like traditional American style bacon. With Pancetta the emphasis is on the quality of the meat, as opposed to bacon where the emphasis is on the smoking flavors. La Quercia’s pancetta is salted pork that is lightly dried and then rolled and put into a casing allowing the lean meat on the inside to develop a uniform moisture content. Freshly ground spices, including bay leaf, juniper and pepper, resonate through the meat creating an exquisite flavor profile. Because its dry cured, Pancetta Americano can be eaten with or without cooking.
