From the luxuriant Jura landscape in the town of Bellelay, Switzerland, Tete de Moine (TET-duh-MWAHN) literally means "monk's head" and was traditionally made by abbey monks. Tete de Moine, the strongest of all Swiss cheese, boasts a fruity, beefy and almond-like flavor. Wonderfully spicy and aromatic, Tete reveals its flavor when placed on a "girolle" - a tool with a vertical blade that pares the top layer into delicate rosettes. These rosettes help to create a stunning cheeseboard but be ready to quickly make more as your guests descend! (Each form weighs roughly 1.5 lbs.) Magnificent when thinly shaved into "rosettes" with a girolle.
Served with apples, prosciutto, cornichons and salami. Ideally paired with Rhone reds or pale ales.
