From the highlands of Lombardy, where it is often said you can find the sweetest cow's milk in Italy, hails Ubriaco. This cheese is made from unpasteurized cow's milk, its form is firm and it is immersed in a young chianti before it is set to age. Ubriaco actually means "drunk" in Italian! At first taste it will appear sweet and candy-like with hints of red wine and chocolate, but as it moves to the back of the taste buds, it will leave you with a sharp and spicy aftertaste. Slightly granular but tight in texture. At the perfect age it should release just the right amount of oils. Discover for yourself Ubriaco's intriguing personality. Letting much else interfere with this cheese's intensity would be a shame.
To serve, we prefer to shave large but thin slices of Ubriaco which seems to bring out all this cheese has to offer.
