This is it--true English Stilton.  While its easy to come across less impressive Stilton these days (those, for example, sharp and salty fruit-studded white cheeses), it's much harder to find traditional, hand-ladled stilton, like that from Colston Bassett.  This pasteurized cow's milk blue cheese, sourced to us by our friends at Neal's Yard, is, however, the real thing: bold flavors of chocolate, toffee, grass, heavy cream, and dried fruit meet a creamy-yet-crumbly texture that melts in the mouth.  Perfect alongside a glass of port or a deep, dark stout, this Stilton is among the finest you can find in the world today.
