Product Description
Widely produced throughout the low-lands of Savoie in farms, factories and fruiteries. Tomme de Savoie (TUM-duh-sav-WAH) is made from raw cow's milk and most cylinders are 2.5 to 5 inches high. and are typically 8-9 inches in diameter. The key to choosing these Tomme's are to be sure they are genuine since there are many imitations on the market. Look for the words "au lait cru" and "fabrique en savoie" which will ensure you of this. A good Tomme de Savoie will have a rustic, chalky, gray rind that has specks of red, yellow and pink pigments. If you half-moon the wheel, as we do for display, you want to about 1/2 inch into the cheese through any eyelet and it should look gluey and shiny on the inside of the hole. The inside edge of the rind should be dark gray contrasting with the banana color of the paste.
Hazelnutty, beefy, complex yet refined flavor with a slightly moldy aroma. Marries well with salamis, pates, and picnic fare. Juicy peaches and plums compliment the cheese well says Steve Jenkins. One of our favorite "peasant" cheeses.
