From Greci & Folzani, this prosciutto is truly an artisanal product. Made according to ancient methods, Prosciutto Rotondo Dolce begins with the highest quality pork legs, taken from pigs that feed on a blend of grain and whey from Parmigiano-Reggiano production. The meat is then hand pressed, in the old world style, rubbed with salt and cured for, at least, 18 months. Unlike traditional prosciutti, Rotondo Dolce is a deep ruby red, with a sweet, gamey flavor that both captures the quality of the meat and the terroir of both Emilia-Romagna, the home of Greci & Folzani's pigs, and Parma, where Greci & Folzani is located.
