Asiago Stagionato contains some really freaky tropical fruit notes (primarily pineapple with hints of guava) and an umami reminiscent of Vietnamese grilled pork. What you end up with is a cheese that eats like a meal. Rich and satisfying as it hits on all of the scientific labels for taste.

The Story

Pre-1000 A.D., Asiago was made from cow and sheep milk. In the early 1500s production was transitioned to all cow's milk as sheep have a very aggressive style of browsing which made the wet area prone to landslide.

Usage Tips

Try with a simple prosciutto.
