We refer to Bra Duro as true Italian style farmhouse cheddar. The word duro, means rough or rugged in Italian and refers more to the rustic rind. Wheels are 4 inches thick and about 15 inches in diameter. It ranges from semi-firm to firm with an ochre-yellow color and a slightly sharp, Cheddar-like flavor. Made from cow's milk from the region of Cuneo, it is much more piquant than its younger and milder counterpart, Bra Tenero. Although rare, we do carry both cheeses most of the year but we prefer the aged qualities of the Bra Duro. Use anywhere you might require farmhouse style cheddar or a rich and sharp table cheese.
