6 Cheese Spread Secrets

Di Bruno Bros. cheese spreads are the ultimate snack on our imported Crostini, with an artisan crusty bread, or smeared on a chicken sandwich. But of course you know this already. What you may not know is that our cheese spreads can take almost any sandwich, pasta, or dinner recipe to new heights, and we are going to tell you how. Here are six secret ways that chefs use our Di Bruno Bros. handmade cheese spreads to kick up their recipes, just in time for your Memorial Day extravaganza.

Torcetti Pasta Salad
Pasta salad is always an expected addition to any BBQ celebration. One of our cheese spread secrets is that our chefs use the garlic and herb spread as a base for pasta sauces. We like to sauté chopped asparagus and bell pepper with salt and pepper, and then over low heat, add the Handmade Garlic & Herb Spread and cook it down with whole milk. Once cooled, you can create a truly gourmet pasta salad by tossing it with Bartolini Torcetti Pasta, a generous splash of Di Bruno Homemade Red Wine Vinegar , slivered Ham (try this Gran Biscotto or your personal favorite) , and some good quality Mayonnaise. At our Upstairs @ Di Bruno Café, Philadelphians gather every day on their lunch hour for an all too brief brush with genuine Italian hospitality.     Made a pasta dish with Abbruzze tonight and got a big thumbs up from the husband. I didn’t find a pasta sauce recipe on this site so I experimented. I took 6 ounces (half of a 12 oz container of DiBruno’s Abbruzze) and melted on the stove with 1/2 cup white wine. It covered a pound of pasta perfectly for a delicious dish. I served it with a filets of grilled pork tenderloin on top. The pasta was very spicy and my lips are still burning a little, which I just love. To reduce the kick, you could add about 1/4 cup or more of cream cheese or adjust the proportions I mentioned above to your preferred heat level. Abbruzze is my favorite DiBruno’s product and I will try the other flavors for future pasta or sauce dishes paired with various other meats and veggies.
