Being originally from Denmark, a country of, among a plethora of excellent foods, very good dairy products, I am very picky. These cheeses are all: tasty, perfect for a whole variety of dishes, and I highly recommend them.
Asiago is a delightful medium aged cheese exhibiting all of the flavor benefits of a much older cheese while still remaining supple and moist

Aged Asiago contains some really freaky tropical fruit notes (primarily pineapple with hints of guava) and an umami reminiscent of Vietnamese grilled pork. What you end up with is a cheese that eats like a meal. Rich and satisfying as it hits on all of the scientific labels for taste.
Pre 1000 A.D., Asiago was made from cow and sheep milk. In the early 1500s production was transitioned to all cow's milk as sheep have a very aggressive style of browsing which made the wet area prone to landslide.
A classic for antipasto, pair with pepperoni, olives and roasted peppers.
