Cambozola is a triple-cream soft-ripened cheese. The consistency and taste make it so irresistible that it stands in a class by itself. It's not Brie, not a blue - distinctively Cambozola! This special hybrid cheese variety is a cross between French Camembert & Italian Gorgonzola, produced in the Bavarian region of Germany by Kaserei Champignon. The cheese is made like a French Triple creme, and then injected with the mold that makes blue cheese; however this cheese is much milder than true blues, as there is only a small amount of the blue mold. This cheese is best presented with grain crackers and fresh bread, and it also marries well with raw vegetables, and tart crisp fruits like apples and pears.
