Description: An Alpine-Style cheese made in Hartland, Vermont with complex grassy and nutty flavors.
All of our cheeses are hand-cut, by humans. For this reason, our product weights may fluctuate between 7oz and 9 oz.
Ascutney Mountain is a rising star in our arsenal of American Artisanal cheeses. The cheese is made with the milk of Jersey cows and is “Alpine” in style but with a pleasantly sharp finish that is clean on the palate.mignucci
Produced in Hartland, Vermont, Ascutney Mountain is one of two cheeses made by Cobb Hill Cheese from their small herd of Jersey cows. Ascutney Mountain is produced from raw, whole milk and the recipe is based on the Alpine-style cheeses of Europe, such as Gruyère and Appenzeller.
The texture of Ascutney Mountain is firm and smooth, with an interior paste the color of pale straw and dotted with occasional small holes or "eyes." The rind is thin, and a dark, russet color. The flavors vary by season, more complex from the summer milk, and the taste plays notes of grass, earth, and hazelnuts - balanced with a pronounced tang and lingering finish.
Cobb Hill is part of a cooperative 270 acre farm that is also home to ten other agricultural enterprises, all of which are operating in an ecologically sound and energy efficient way.
