A truncated Pyramid of Chevre that comes to us from the renowned Loire Valley of central France. The legend says that Napoleon cut the top off of the once-pyramid shaped Valencay after his disastrous Egyptian Campaign. Valencay has a flavor distinctly reminiscent of citrus along with a slight mineral quality. The cheese is dusted in a light covering of ash to attract molds which then ripen the cheese. This cheese pairs best with a floral honey and a light white wine.
