Cashel Blue is a semi-soft blue cows’ milk cheese. It also happens to be the first farmhouse blue cheese made in Ireland. The cheese is made on the farm of Jane & Louis Grubb, a husband and wife team, who are very proud of their pedigree herd of Friesian dairy cows, which was developed by Jane’s father.

The cheese is considered to be at its prime when 3 months aged, when it develops a fuller flavor and softer texture. It is also a vegetarian cheese, made with a vegetarian rennet.

The Cashel Blue a delightful when served with Port to finish a dessert course, or spread on crusty bread. We also recommend melting in a quiche with leeks, or melting with butter and parsley for topping your steak
