Brie is one of the AOC Cheeses of France, which means it is government controlled and certified to be a genuine Brie product. This cheese comes from the town of Meaux in the Brie region, and is pasteurized and legal to export, whereas traditional Brie is unpasteurized, therefore this particular Brie is not an AOC product. Brie de Meaux is ripened for 4-6 weeks and the rind gradually becomes golden with rosy tinges of color. When cut open, the interior paste is golden straw-colored, creamy and easy on the palate. As with all good quality Brie cheeses, it is served best with fruits, breads, and full bodied red wines.
