A rather unusual little Norwegian cheese made from Goat's milk whey. It is essentially a form of Goat's milk caramel. Gjetost is made by cooking goat's milk cream and whey until the water within the product evaporates, leaving a thick, sweet product that is packaged as soon as it cools. While very sweet, Gjetost retains a bit of the tangy, grassy flavor loved by goat cheese fans all over the world.
