Shellbark was the first local cheese we sold here at Di Bruno Bros. Pete Demchur, the cheesemaker was promoting and practicing green and local long before it was cool. Since he raises and milks just over 30 goats and makes the cheese by hand, you know there is great attention to detail in this cheese making process.

Sharp II is a unique style of fresh but aged chevre. By allowing it to mature for about two weeks longer than your average chevre, Pete coaxes some deeper lemon flavor and more acidic bite out of it than you might expect from this unassuming and pristine looking cheese. Sharp II is a magnified version of a great goat cheese. Crumbly and fluffy, tangy and tart with a big fresh milky backbone to hold it all together.

Best enjoyed with Vouvray, Sancerre, wit beers and even crisp lagers. For a ton of fun match it with a rauchbier for an exercise in contrast.
