Crucolo is an artisan cheese made by one producer at the Rifugio Crucolo in Terntino. The Rifugio is in Northern Italy, perched halfway up the mountainside, serving as a resting and eating place for weary travelers. The cows are raised here, and walked up the mountainside before the heat of the summer becomes too strong. The cheese that is produced here is a pale straw yellow color, with a rich and buttery flavor, and irregular holes throughout the cheese. Crucolo is a creamier texture than Parmigiano, has a tangy finish while remaining buttery, and is great for melting. It is also excellent when served with fruits and crackers.
