One of France's oldest documented blue cheeses, Fourme D'ambert dates back to Roman times and is one of the popular blue cheeses available in France. It is aged for a minimum of two months, during which it is injected with a sweet white wine called Vouvray Moelleux. The cheese has a dense, creamy, almost fudgy interior and a distinct fruity, tangy quality from the wine.
