Hooligan is made by Cato Corner, a small farm in Connecticut with about 40 Jersey cows. This cheese has won medals and was selected by both Saveur magazine and Slow Food USA as one of the top American cheeses.

This washed rind cheese is bathed twice a week and aged for two months for a fabulously funky and very strong aroma. Made in 1.5 lb wheels, Hooligan ripens over 2 months to develop a soft creamy interior and a gorgeous orange rind. Its makers recommend melting it for a beautifully stinky toasted cheese (a bit like raclette).
