There is everything to like about this cheese! With the herd of 40 Jersey cows and the cheese production at the same location, the cheesemaker and herdsperson work closely together to produce truly delicious farmstead cheese. We are so proud that this European style cheese is made here and showcases what American cheesemakers can accomplish.
The flavors are of sweet milk and tart sour cream but with a nuttiness and a meaty depth that lingers wonderfully on your palate. Not only does this cheese boast a wonderful flavor, it also supports a wonderful cause: the Farms For City Kids Foundation which educates kids on the process and helps foster enthusiasm and sense of involvement with food, the farm, the environment and each other.
Reading Raclette is delicious on its own, perfect for snacking, or melted over potatoes and served with meats, pickles, and a side of whole grain mustard. I enjoy this cheese with a lighter red wine - but not too light!
