During the Middle Ages, dairy farmers would pay taxes in the form of milk. When tax collectors arrived at a farm to collect, the farmers would milk the cows and pay up. However shrewd farmers would pinch off the udder early and pretend that the cows were dry. After the tax collector left, the farmer would re-pinch the udder and collect the rest of the milk. This milk was higher in butterfat and used to make small washed-rind cheeses. The rind is reddish orange with a velvety white mold and paste is smooth, creamy and supple. The cheese is best accompanied by a Shiraz and a smile as you eat a cheese who's tradition rises out of sticking it to The Man.
