Sitchelton is a new generation of an old British cheese. Cheese maker Joe Schnieder and Randolph Hodgson of Neal's Yard Dairy set out to create a blue cheese that would recreate the original style of Stilton that existed prior to the 1989 decision to legally define Stilton as a pasteurized cheese. They named their authentic product Stichelton, after the name of the town of Stilton as recorded in the 13th century. Stichelton has a flavor reminiscent of buttermilk upfront with a rich, fudgy quality to the finish. This is a blue meant to be enjoyed with a glass of port, close friends and rigorous conversation (most of which will be about the cheese).
