Tomme de Savoie is a widely produced cheese from the lowlands of Savoie made by producers both large and small. Our Tomme de Savoie is a raw milk creation with a buttery, almost Brie like interior paste and a coating of grey to chalk colored mold. A slightly meaty flavor dominates the first taste along with a slight creaminess reminiscent of stronger Brie. A second wave of flavors including toasted Hazelnuts or black Walnuts dominates the finish. It is a perfect companion for summer stone fruit like plums or apricots.
