This semi-soft cheese was first produced in 1983, and has won awards from the Irish Food Writer's Guild, the British Cheese Awards, and the World Cheese Awards. It is nutty, creamy, and salty in flavor, with a pungent earthy odor and deep yellow interior. Ardrahan is a washed rind, vegetable rennet, pasteurized, cow's milk cheese; the rind is ridged, moldy & brine-washed.

Its maker, Mary Burns, makes this cheese entirely from the milk of her Friesian cow herd in her farmhouse located near the town of Kanturk, in Cork County, Ireland. Try serving with fresh bread, and it's best served at room temperature.
