The flavors are of sweet milk and tart sour cream but with a nuttiness and a meaty depth that lingers wonderfully on your palate. Reading Raclette is delicious on its own, perfect for snacking, or melted over potatoes and served with meats, pickles, and a side of whole grain mustard. I enjoy this cheese with a lighter red wine - but not too light!
