Tarentaise is made by Spring Brook Farm, a non-profit that brings inner-city children to the country to experience "new dimensions of learning." Modeled specifically after a cheese of the same name from Savoie, France, this Alpine cheese is cave-aged for around two years. This lengthy developmental period enable big, bold flavors to develop, especially those of toasted nuts and sweet cream. The rise in Tarentaise's popularity has been meteoric. Produced for the first time in 2008, it placed third overall at the American Cheese Society meetings in 2010, and followed that success with "Best USA Cow Milk Cheese" from the World Cheese Society just months later.

Like all Alpine cheeses, Tarentaise is excellent for melting, either in a grilled cheese, scalloped potatoes, or mac and cheese. This version, however, deserves to be the keystone of your all-American cheese plate, served alongside roasted nuts and chutney.
