This beautiful French goat's cheese is the small village of Chavignol's claim to fame. Located in the Loire Valley, this small village has less than 200 citizens. This cheese is formed in small 2 inch by 2 inch buttons weighing 2 ounces. We recommend seeking out Crottin which has not been aged too long. You can usually tell by the color of the rind. Look for light beige exteriors with blue speckles of mold. The palate of this cheese is sharper than most chevres and often drier, and remains to this day one of the best A.O.C. controlled chevres. Look for the word fermier, on the label indicating its farm made distinction. Crottin makes a great appetizer with mixed greens and olives, and in France it's traditionally baked and served atop a salad of fresh greens.
