Made on an island dominated by sheep milk cheeses, Pantaleo stands apart. A six-month aged goat from Sardinia, it is firm and slightly sharp with an undercurrent of sea salt, white pepper and a finish of pistachio. It is, quite simply, addictive. We will often sample it to a customer who claims not to like goat cheeses, and its success in turning them has earned it the nickname "The Converter." Tasty as a snacking cheese, we like to use it as a less-salty alternative to Locatelli for topping pasta or couscous.
