A rustic table cheese from Reggio-Emilia, this is not your grandmother's Pecorino. It is aged for approximately eight months, which is long enough to dry out most pecorino. To combat potential loss of moisture, this cheese is washed with olive oil and aged in caves (Grotto), which are damp and humid, preventing the cheese from drying. This maturation environment contributes an earthy, grassy flavor and smooth texture, the exact opposite of dry, salty Pecorino Romano. In Reggio-Emilia, Pecorino di Grotto is served with other rustic fare: coarse ground soppressatta or salami, marinated olives, sundried tomatoes, olive oil and crusty bread. A hearty red table wine should do the trick.
