Ricotta means, re-cook, in Italian and accurately describes how this cheese is made. Whey left over from cheese production is reheated to 185 degrees F and the particles that separate from the whey are scooped and drained. The result is a fresh ready to eat cheese that can also be salted, pressed, and aged. Ricotta Salata for the table is made from sheep's milk and is pressed and salted before being aged up to three months to produce a cheese with a texture similar to feta but drier, sweeter and less salty. Pair with watermelon, fennel, cubed crusty bread and kalamata olives for a nice panzanella.
