Produced on the edge of the Bodensee lake by three master cheese makers, this thermalized cow's milk cheese is firm and powerful. Brine and herb washed and aged for 6 months, it is definitely sharp (Scharfe) and occasionally barnyardy, as the raging bull on the label can attest. The creaminess, though, always remains on account of the whole milk and a touch of cream used in the cheese making.
The result is a semi-firm gruyere style that is slightly sharp, intensely creamy and a bit funky up front. The funkiness quickly dissolves into a nice savory mid-palate with a long creamy finish. With its superior meltability, Scharfe Maxx is a great cheese to cook with, but really shines on a cheese plate when served with fresh red grapes or a crisp apple.
