An Italian cheese with a texture reminiscent of French brie. This cheese has a flavor closer to earthy Fontina than the French classic. Taleggio starts of with a fruity flavor when it's younger and slowly develops a beefy quality that pairs well with woody mushrooms and makes a lovely topping for Polenta or pizza. Taleggio can be used as a more adventurous substitute for baked brie but we enjoy it best on a warm, crusty piece of Italian bread drizzled with a strong honey.
