Nature dictates that some cheeses only be produced at certain points during the year, but you can rest assured that when they’re available Di Bruno Bros. will be well stocked. Dependent on diet and laction periods, certain animals will only give milk at certain periods, which will determine when and how much cheese can be produced. Since the aging process is also a factor, we can only stock these seasonal cheeses at certain times of the year, but when they’re in they will be at the peak of ripeness.
