This is the original Italian melting cheese. Each wheel of Fontina is made only from a single milking of the Valdostana cows indigenous to northern Italy. The milk is lightly cooked during the cheese making process, giving the finished product an earthy, almost woodsy flavor that pairs wonderfully with a wide variety of charcuterie. Fontina is a creamy, full fat cheese renowned for its melting properties and usage in classic northern Italian Fonduta, Italy's answer to the famous Swiss fondue.
