Comte is a firm pressed cheese produced in the Jura mountains of France. Comte is made in cooperatives that gather milk from the small farms of the surrounding area. It displays tremendous seasonal variation, having a nutty, almost toasty flavor when made from fall and winter milking, and a brighter, tangier, fruity quality when made from spring and summer milking.
