his is Haystack’s first raw milk cheese, aged for a minimum of four months. It is then further cared for by our cheesemongers to age another 2 months. Its flavor is robust and herbal, rounded out with a distinct nuttiness. This cheese pairs perfectly with our black lava cashews, or fresh pears and cherries, or our Rigoni Jams, especially the Cherry and Apricot flavors.

Haystack Mountain Goat Dairy began in 1989 when Jim Schott left a career in education to start a family farm in the sleepy little city of Longmont, CO; nestled between Haystack Mountain and the city of Boulder. After doing some research, he fell in love with a herd of cute little goats, and purchased his first 5 animals, quickly growing to 25. A few years later, Jim’s oldest daughter Gretchen moved from Massachusetts to become his partner in cheese making, and together they learned to make and sell delicious chevre, and began living their dream.
