Mahon is sometimes referred to as the Cheddar of Spain, which is a bit unfair as they have nothing in common other than cow milk. From the island of Majorca, Mahon is rubbed with olive oil and paprika as it ages, and is subsequently nutty, slightly sharp and faintly salty.
