Named for Lake Raschera in the Piedmont's Cuneo province, Raschera is made from partially skimmed cow's milk and aged for roughly 3 months. The cheese comes in a 22 pound square which is a holdover from a time when these cheeses were stacked on the backs of donkeys and hauled down the mountainsides to market. The texture is dense and elastic and the paste is grayish yellow. The flavor is mild and sweet when young and becomes savory and more complex with age. Raschera makes for a fine table cheese but is also great for melting with Risotto and roasted vegetables and is a nice alternative to Fontina.
