The Grandfather, of what we in the states know as Swiss cheese, Emmental was originally produced in the canton of Bern in Switzerland, though its imitators can be found around the world. It is made from cow's milk and comes to us from Switzerland in wheels weighing as much as 200 pounds. It has a distinctly tangy flavor with a fruity sweetness to the finish and can be paired with a wide variety of fruits and raw vegetables. Along with Appenzeller & Gruyere, this is one of the classic ingredients in traditional Swiss Fondue.
