Maturing in the cellars of the abbey for a minimum of 6 months, Chimay Vieux is a hard, sharp, and slightly bitter cheese from the Notre-Dame Scourmont Abbey. Made with pasteurized, unskimmed cow's milk, this hard cheese has flavors reminiscent of toasted nuts and wild flowers.
