This is one of the long time favorite Pecorino Italian table cheeses at Di Bruno's. It is a semi-soft sheep's milk cheese from Crotone, a small mountainous city in Calabria in Italy. The cheese has a distinctive hatched indentation on the rind, because it is aged in a wicker basket for 6 months. The cheese hits the palate with a strong smell and mildly sharp sheep flavor and a nutty, citrusy zest. We recommend enjoying this cheese as a simple snacking cheese by itself, or pairing with antipasti; salami, soppressatta, olives, marinated mushrooms, and roasted peppers!
