We have only been stocking this cheese on our shelves for five years, but in that time it has become one of our most requested cheeses. Aged in canestrati, or in a basket, this Pecorino is washed with olive oil as it ages, which gives it flavors of toasted almonds and roasted olives. Wonderfully rustic and grassy, it, like its cousin Manchego, is best enjoyed in simple applications, as part of a charcuterie plate with marcona almonds and honey. By the way, if you like Locatelli but wish it were less salty, then grate Moliterno over your next pasta dish.
