While it is agreed that cheese was first created by accident, many countries claim that this fortunate mistake happened within their boundaries. What cannot be disputed, however, is that the first intentional cheese production took place in the Basque. Scientists have found cheese cooking pots in the Pyrenees mountains that date to the year 3000bc. That's 5000 years of practice and little has changed since its inception. Ossau-Iraty, the grandfather of Basque cheeses, has been made in the same style for millennia, and can best be described as the highest quality sheep milk cheese made by people who clearly know what they are doing. Tasting of almonds, hazelnuts and olives, it is mild but complex and instantly satisfying. We feature it often with Trappist beers during our Beer and Cheese Happy Hour, but it works best with big, balanced reds like Pinot Noir and Irouleguy.
