Produced by Mary Keehn at Cyrpress Grove in Humboldt County, California, Humboldt Fog has the distinction of being the first American cheese exported to France. It's easy to see why the French would like it. Lemony, tangy, and crisp, it stands proudly against the best chevres the Loire Valley has to offer. Like Morbier, it has a layer of vegetable ash bisecting it horizontally. This is strictly for aesthetics, as Mary says the ash represents the fog rolling through Humboldt County at dawn. So draw a cork from your favorite Sauvignon Blanc, set your mind to California dreaming, and enjoy this national treasure.
