Pont L Eveque has been produced in Normandy since the 1100s. It is a mildly pungent washed rind answer to Brie. A 2 pound square wheel is washed, brushed and turned frequently during the 6-8 week aging period. The result is a paste that is rich and creamy but lacks butteriness and lacticity. Instead, what you get is a cheese that has the flavor of red and green apple and hung meat. Pont L Eveque is best served with fresh fruit, golden raisins, Merlot or Calvados.
