Haystack Mountain Goat Dairy began in 1989 when Jim Schott left a career in education to start a family farm in the sleepy little city of Longmont, CO; nestled between Haystack Mountain and the city of Boulder. After doing some research, he fell in love with a herd of cute little goats, and purchased his first 5 animals, quickly growing to 25. A few years later, Jim’s oldest daughter Gretchen moved from Massachusetts to become his partner in cheese making, and together they learned to make and sell delicious chevre, and began living their dream.
