Shropshire Blue was first made in the 1970s, in Inverness, Scotland. The original name, Inverness-shire Blue, didn't stick, so it was renamed Shropshire Blue, although it was not made there. Shropshire Blue was created by cheesemakers trained in the ways of making Stilton, and the process is very similar. The main difference is that annatto is added to produce the beautiful yellow color. Today, Shropshire is made by a handful of creameries in Scotland . This is a full fat cow's milk cheese made with vegetable rennet, aged 10-12 weeks. The flavor is similar to Stilton, perhaps a bit sharper and creamier.
